Seoul, November 2025 – Cornerstone, the Italian restaurant at Park Hyatt Seoul, will present the “Riso e Vino” Risotto & Wine Pairing Promotion from November 17 to December 21, 2025. Designed around a seasonal theme, the promotion features four risotti that reinterpret traditional regional Italian recipes in a contemporary style, each week paired with a carefully selected native Italian varietal wine to highlight the flavors of the season.

 

Unlike traditional pairing, where wine is chosen to match a completed dish, Riso e Vino adopts an innovative “reverse pairing” concept. Wines are selected first according to their aroma, texture, and acidity, and the direction of each dish is then determined and refined around the wine’s character. This approach creates a harmonious experience in which each plate of risotto and each glass of wine elevate one another.

 

All wines in the promotion are crafted from indigenous Italian grape varieties that express the unique character and terroir of their regions. The timing also coincides with the period when freshly harvested Carnaroli rice from the golden fields of Piedmont and Lombardy begins to be milled in November, underscoring both the seasonality and authenticity of the risotto.

 

The gastronomic journey begins with 2020 Mirafiore Nascetta, a white wine distinguished by bright notes of lemon and lime and a clean, mineral finish shaped by concrete tank aging. To echo its character, Cornerstone presents Gamberi Rosso risotto with black tiger prawns and Tuscan bisque, offering a refined balance of acidity and umami.

 

In the second week, guests will enjoy 2021 Sentiero delle Gerle Etna Bianco, made from Carricante grapes grown in the volcanic soils of Sicily. With delicate aromas of peach and apricot and subtle smoky nuances, it is paired with squid ink seafood risotto that captures the depth of the sea, allowing the wine’s smokiness to naturally extend the savory, briny flavors of the dish.

 

The third week features 2020 Zenato Ripassa Superiore, a red wine that achieves a concentrated texture through the ripassa method. To reflect its wintery notes of blackberry, chocolate, and cinnamon, Cornerstone serves saffron risotto enriched with braised beef cheek, basil pesto, and a rich beef jus. The weight and complexity of the wine harmonize with the dish, enhancing the sense of seasonality.

 

In the fourth week, 2018 Piano del Cerro, made from Aglianico grapes, takes center stage with a firm structure and layered flavors of blackberry, plum, and spicy minerality. It is paired with porcini mushroom risotto elevated with porcini, button mushrooms, and black truffle. The structured red wine adds depth to the mushrooms’ aroma and texture, bringing the experience to a satisfying close.

 

The final week features an encore of the promotion’s most popular pairing, offering a meaningful finale inspired by guest preference.

 

More than a simple menu concept, the Riso e Vino promotion presents a new approach to pairing, in which wine leads the composition of the dish to create a precisely tuned harmony of flavors. In this month that underscores the seasonality of risotto, the promotion offers a more nuanced expression of the individuality of Italian indigenous grape varieties and the refined harmony of authentic Italian cuisine and pairing found only at Cornerstone.

 

The promotion is priced at KRW 50,000 per person, and is available daily from 6 PM to 10 PM.
